One of my favourite singaporean breakfast is half boiled eggs. Eaten with delicious kaya toast from yakun kaya toast is a plus! I used to eat it almost every day while living on my university campus. The dormitory I lived in served half boiled eggs submerged in water in a red plastic mug. I used to eat it with sweet soy sauce/ kicap (ketjap manis in dutch) like how I used to at home. But the Malaysians in my dormitory used to eat it with light soy sauce and white pepper! Nowadays I realise I do enjoy it with light soy sauce and white pepper more too. I just need to be extra careful with the light soy sauce, a little too much and it would be too salty to eat!

Half boiled eggs are simple but it is all about timing. One minute late, the eggs would be too cooked and a minute early, the eggs would be almost uncooked! If you would like to try half boiled egg (plus kaya toast) you can try it at Ya Kun Kaya Toast, Toast Box or and from the drink store of most Kopitiams around Singapore. If you’re making it from home, below is a reference I found to cook the perfect half boiled eggs!
